Busy day at work today! Even though I didn't get home until late, I STILL got my SeXercise workout in this evening. The workout only takes about 45 minutes and I find that because of the varied intensity of the intervals, it seems to move along fairly quickly. Great thing about a DVD workout that I can do at home -- my workout clothes don't have to match, hee hee! (For some reason, I couldn't find color-coordinated shirt and shorts tonight. Do laundry...next on my checklist of "Things To Do.")
As I promised yesterday, here is the APPLE COBBLER recipe that I made for my Super Bowl party. Guests were surprised that a healthy dessert could taste so good!
Healthy Apple Cobbler:
1 cup water
4 teaspoons arrowroot flour (or 2 tablespoons cornstarch)
2 teaspoons cinnamon
5 tablespoons agave syrup (or 7 tablespoons granulated Splenda)
4 apples - peeled, cored, and sliced
1 cup brown rice flour (or 1 cup whole wheat flour)
1 teaspoon baking powder
1/4 cup olive oil
1/4 cup + 3 tablespoons rice milk (or low fat soy milk or almond milk)
1 tablespoon of vinegar
Preheat oven to 375 degrees F. Mix arrowroot flour and water in a large pot. Then over medium heat, add cinnamon, 4 tbsp agave syrup (or 6 tbsp Splenda), and apples. Stir and cook until mixture thickens and apples soften (about 10 minutes). Pour into a baking dish.
Then combine rice milk and vinegar, and set aside. Prepare dough by combining brown rice flour and baking powder. Mix in olive oil. Add rice milk & vinegar mixture along with 1 tbsp of agave syrup (or 1 tbsp Splenda). Drop dough about 1 tbsp at a time on top of apples. Bake for about 20 minutes until you see the dough topping turn golden brown. Serve it warm -- very yummy!
